Smoky Chipotle Tomato & Eggs
The whole family will love this irresistible brunch favourite.
1/4- Heat cooking oil in a skillet, add the onions and cook until softened. Add garlic and cumin, cook for another 2 minutes.
- Add tomatoes and Chipotle Cooking Paste to the pan.
- Create a small dip for each egg and crack the eggs in to the sauce.
- Cover the skillet and simmer until eggs are cooked to your liking. Season to perfection with salt and pepper.
- Serve with crusty bread and sprinkle with chopped coriander.

Spicy Refried Beans on Toast
Give your baked beans on toast a Latin American twist! Quick and easy to make.
2/4- Heat cooking oil on a medium heat, fry egg to your liking.
- Meanwhile, toast bread of your choice.
- Heat up the Spicy Refried Beans gently in a microwave or in a saucepan.
- Spread the Spicy Refried Beans on the slices of toast.
- Place the egg on top.
- To serve, garnish with coriander and Medium Salsa.

Avocado & Mozzarella Quesadillas
Ideal for a starter, snack or lunch. Very versatile.
3/4- Grate the cheese and slice the Mozzarella and tomatoes. Chop the avocados in half, scoop them out of their shell and cut in thin slices. Chop the Jalapeños.
- Spread cheese, mozzarella, sliced tomato and avocado on four of the Tortillas.
- Drizzle salsa verde and add the Jalapeños.
- Place a Tortilla wrap on top of each prepared wrap and press gently.
- Fry your Quesadillas in oil, in a medium hot pan on both sides, until the Tortillas are golden and the cheese has melted.
- Cut each Quesadilla in triangles and serve!
