If you can´t get enough Mexican, Migas is the perfect breakfast or brunch dish for you. Creamy scrambled eggs topped with chips, salsa, avocado and coriander. Try for yourself!

0.25 can Santa Maria Red Jalapeños
1 tbsp olive oil
8 eggs
100 g grated cheddar cheese
1 tsp Santa Maria Rock Salt
Accompaniments
0.5 packet tortilla chips
1 bottle Santa Maria Medium Salsa
1 avocado
2 tbsp chopped coriander

How to prepare

  1. Finely chop the onion. Fry the onion and Jalapeños in the olive oil over a medium heat.
  2. Whisk together the eggs, grated cheese and salt.
  3. Pour the beaten egg mixture into the pan and leave it to stand for approx. 30 seconds. Then gently stir occasionally using a wooden spoon,until the egg mixture is just cooked and still creamy.
  4. Top with crushed tortilla chips, Salsa, sliced avocado and chopped coriander (or chives).

Mexican Migas is the ultimate simple breakfast! Try it for brunch with bacon, chorizo and fried potatoes!
